1 cup quick cook rice
2 cups broth or water
4 cups raw chicken, diced bite size
1 small pkg French onion soup mix
1 cup apricot preserves
Preheat your oven to 350 degrees. Lightly oil a casserole dish.
Put the rice and broth in casserole dish and stir to combine.
Put the chicken in the casserole dish, sprinkle with the French onion soup mix evenly.
Spoon the apricot preserves over the top and spread slightly.
Cover the casserole and bake in preheated oven for 45 to 50 minutes or until chicken is cooked and rice is tender.
Will serve 2 to 4.
