Parmesan Roasted Carrots

8-10 peeled carrotscarrots
1 Tbsp melted butter (or coconut oil)
1 Tbsp minced garlic
4 Tbsp grated parmesan cheese

  1. Preheat oven to 400F.
  2. Place carrots on parchment lined baking sheet. Mix garlic and butter together and drizzle over carrots.
  3. Roast for 15 minutes rotating carrots occasionally.
  4. Top with cheese and roast another 10 minutes or until carrots reach desired doneness. Serve immediately
